Overview
A winery and farm owned by Maurizio Vallona, who has extended his winegrowing business to also restore the two historic water mills now used to grind the several varieties of wheat grown on the Vallona estate. Here, innovation meets tradition: the grafts are taken from a centuries-old vineyard and the growers use the ancient custom of alternating different grape varieties on the same vine. Maurizio's goal and philosophy is to produce excellent wines grown in harmony with nature and the soil, while experimenting with new methods aimed at constant improvement. The result? Unique wines with a strong, distinctive identity. The flours milled on the estate are also the result of ancient blends, with a couple of modern varieties added for diversity. This makes them firm favourites with the local trattorias, which skilfully work them into traditional recipes.
