The center of the village of Candelo is characterized by the presence of the evocative medieval Ricetto, a cluster of buildings mainly dating back to the 14th century, fortified by a wall made of cobblestones in a herringbone pattern. These buildings served as agricultural storage and shelter for the population in times of danger. Protected at the corners by circular towers, the Ricetto has a pseudo-pentagonal layout, with five roadways intersected by two orthogonal streets. The Ricetto can be accessed through a gate-tower with a pointed arch. In the small square in front of the entrance stands the Palace of the Prince, a sort of fortified house with three levels and a keep, built at the end of the 15th century.
Also from the medieval period are the canestrelli, the typical sweet of the village, very thin and irregularly shaped.
