Strangozzi with Truffle

Strangozzi Pasta with Black Truffle Sauce

• 500 g (18 oz.) Strangozzi (pasta in flat squares or short rectangles)
• 100 ml Extra-Virgin Olive Oil
• 100 g (3.6 oz.) Black Truffle, cleaned, washed and grated (or diced)
• 1 clove garlic
• 1 anchovy, boneless
• salt
• pepper

Preparazione Directions

1.  Heat some olive oil in a pan and add the garlic and the anchovy, already cut into pieces.

2. When the garlic has reached a golden-brown color and anchovy has melted, remove pan from fire, remove garlic and wait for the olive oil to cool down a little.

3. Add the truffle, salt and pepper.

4. Boil the strangozzi in salted water, then drain and add to the sauce pan. Cook for one minute more and serve hot.
