Pasta con le sarde (Pasta with Sardines)

• 500 g (1 lb 2 oz) fresh sardines
• 500 g bucatini pasta
• 500 g wild fennel
• 2 medium-sized onions
• 3 salt-packed anchovies
• 50 g raisins
• 50 g (1.98 oz) pine nuts
• bread crumbs
• 1 sachet saffron
• oil, salt, pepper

Preparazione Directions

1. Wash the fennel, cut into pieces and soak in abundant salted water. Water will be used later in the recipe -- don't throw away.

2. Meanwhile, lean the sardines, making sure the heads, dorsal fins and spine are eliminated.

3. Drain fennel and break into small pieces.

4. Mince the onion and fry it in abundant olive oil, using a large pan. Add the salted anchovies and mix w/wooden spoon until they break apart. Add raisins, pine nuts, a spoonful of the salted water, fennel and saffron.

5. Saute before adding salt and pepper, as well as more of the salted water. Cook over a low flame until the onion is thoroughly cooked.

6. Stir the sardines into the mix. Add the wine, letting it evaporate. Cook for 5 minutes more, letting the sardines absorb some of the sauce, then add a few drops of olive oil.

7. Cook the pasta in the rest of the salted water, and toast the breadcrumbs in a pan with a tablespoon of olive oil and a pinch of salt. Stir until bread is a golden-amber color.

8. Drain the pasta before adding the sauce. Serve with a few breadcrumbs sprinkled over the dish.
