• 800 g Fresh Sardines
• 4 Pickled Anchovies
• 50 g Pine nuts
• 1 Tblspn Minced Parsley
• Orange Juice
• 2 Tblspns Sugar
• Bay Leaves
• 100 g Dried Bread crumbs
• 50 g Raisins
• Salt
• Black Pepper
• Extra-Virgin Olive Oil


Preparazione Directions

Clean sardines, leaving tails, then open along the middle, being careful not to remove two halves from spine. In the meantime, heat oven to 200°C/392°F

2. Heat breadcrumbs with 4 tblspns Olive Oil in a pan. Continue to stir so that contents do not burn. Place in a mixing bowl.

Soak raisins in hot water. Mince parsley. Drain anchovies and mince.

Add pine nuts, raisins (wrung out), minced anchovies, sugar, salt and pepper to mixing bowl and mix.

Place a layer of the mix atop the sardines, then roll each sardine, beginning with the head.

Brush some Olive Oil on a pan, then place stuffed sardines side by side, interspersing with bay leaves.

Cover sardines with leftover breadcrumbs, then spray or drip with a mix of Olive Oil, sugar and orange juice.

Heat in oven for 20-25 minutes, then remove, cover and cool for a half-hour.
