Crioli Pasta with Walnuts

• 400 g (14.3 oz.) unsalted cod
• 3 tbspns. Extra-Virgin Olive Oil
• 3 cloves garlic
• 50g (approx. 2 oz.) diced walnuts
• 400 g (14.3 oz.) crioli pasta (or guitar spaghetti)
• Parmigiano, grated

Preparazione Directions

1.  The cod must be kept in water for three days prior to preparation - change the water at least once a day.

2. Stew the codfish in boiling water, keeping the water afterward.

3. Fry the garlic and walnuts with the olive oil in a frying pan.Remove the garlic once it is browned.

4. Then, drain the crioli and add them to the pan containing walnuts and cod.

5. Serve topped with the grated Parmigiano.
