Coniglio alla ligure (Ligurian Rabbit)

• 1.5 kg Rabbit
• 100 g Taggiasca Olives
• 1 Onion
• Garlic
• Rosemary
• Thyme
• Laurel
• Extra-Virgin Olive Oil
• Beef Broth
• One Glass Red Wine
• Pine Nuts
• Salt


Preparazione Directions

Cut rabbit into pieces.

2. Heat 4-5 tblspns olive oil in a pan. Once hot, add 2 cloves garlic and onion (both minced).

Add rabbit and let brown, before uniting laurel leaves, thyme and rosemary (minced).

4. Let cook until rabbit reaches a golden color, then add red wine. Let evaporate, then add olives and pine nuts to the mix.

5. Cover and let cook over a low flame for 1 hour, adding the occasional spoonful of beef broth.

6. Serve rabbit topped with cooking juices.
