Ingredients for the Dough:  

• 600 ml water
• 25 g yeast
• 1 kg flour (and then some)
• 2 teaspoons sugar
• 20 g salt
• 6 Tblspns Extra-Virgin Olive Oil

Ingredients for the Pizza:

• 700 ml dense tomato sauce or tomato paste
• 600 g Mozzarella di Bufala from Campania D.O.P.
• 12 Leaves Basil
• Extra-Virgin Olive Oil
• Salt to taste
• 50g butter

Preparazione Directions for the Dough

1. Place flour on a pastry board and form bowl shape. Then, pour a glass of tepid water, a crumbled yeast cube, and the sugar into the hole. Mix the contents of the hole well before mixing all with flour bowl.

2. In a separate bowl, stir 20 g salt inside a glass of lukewarm water, then add a tablespoon of olive oil. After, add all to the flour mix.

3. Knead, using dough and lukewarm water, until dough is soft and smooth.

4. Place dough into a floured bowl and cover with clean dishcloth. Set aside at room (preferably lukewarm) temperature for 1-1 1/2 hour before moving on to the next steps.


Preparazione Directions for the Pizza

1. Stir tomato paste, 4 tablespoons olive oil and salt in a bowl.

2. Place the dough in a pizza pan with a maximum diamter of 30 cm.

3. Top with tomato paste, olive oil and Mozzarella di Bufala.

4. Bake at 480 degrees Fahrenheit (250 Celsius) for 15 minutes. Add fresh basil and serve.
